Quick pasta with tomato and avocado sauce

Ingredients for 2 servings:

  • 250 g pasta
  • 1 avocado(s), ripe
  • 1 tomato(s)
  • 1 garlic clove(s)
  • 1 bunch of parsley
  • 50 ml cream
  • 1 tbsp lemon juice
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the pasta according to the package instructions until al dente. Mash the avocado flesh and mix with the lemon juice. Finely chop the parsley and garlic clove. Finely dice the tomato. Mix everything together and add the cream. Heat gently in a saucepan, but do not bring to a boil. Season to taste with salt and pepper. Serve the drained pasta with the sauce.
