Toast with avocado and falafel

Ingredients for 1 servings:

  • e.g. olive oil
  • n. B. Falafel, ready-made, approx. 1 – 2
  • 1 egg(s)
  • some salt and pepper
  • some onion powder
  • some garlic powder
  • some coriander powder
  • ½ small avocado(s)
  • 1 slice(s) of toast bread of your choice
  • 1 small tomato(s) for serving

Instructions

Working time approx. 7 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 17 minutes

Add a little olive oil to a small pan and heat over medium heat. Fry 1-2 falafel until golden brown. Crack an egg into a bowl, season with a little salt, pepper, and your favorite spices (I use onion powder, garlic powder, and ground coriander), and whisk well. When choosing the seasoning, please consider the falafel’s flavor, as these are very spicy. Cut the avocado flesh into thin pieces or slices. Season with salt, pepper, and other favorite spices (I like to add a little ground coriander). Once the falafel are done, remove them from the pan and add about 2 tablespoons of olive oil. Fry the slice of toast for a few minutes over medium heat. Add more olive oil for the other side once it has been completely absorbed. Then dip the toast in the egg mixture and fry on both sides until the egg mixture sets. Remove from the pan and arrange the avocado pieces and chopped or crumbled falafel on top. Quarter a small tomato and serve with it.
