Ingredients for 2 servings:

  • 500 g low-fat curd cheese
  • 4 eggs
  • 4 tbsp sugar
  • 100 g wholemeal wheat flour or wholemeal spelt flour
  • 1 pinch of salt
  • 1 dashes lemon juice
  • e.g. cinnamon
  • Oil, neutral, for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Small protein-rich pancakes

Mix all ingredients into a batter and fry in a pan with a little neutral oil to make small pancakes. If you like it a little sweeter, add a little more sugar or sweetener. Serve with jam or applesauce. You can also add apple pieces or raisins to the batter. Very high in protein!
