Mona's oriental herb omelette

Ingredients for 2 servings:

  • 6 eggs
  • 200 g mixed herbs (8 herbs, see note)
  • 1 tbsp walnuts, crushed
  • 1 tsp, leveled turmeric
  • e.g. salt and pepper
  • 4 tbsp rapeseed oil

Instructions

Working time approx. 6 minutes; Cooking/baking time approx. 17 minutes; Total time approx. 23 minutes

Crack the eggs in a bowl and mix slightly. Then season with turmeric, salt, and pepper, and stir in the herbs and walnuts. Heat a little oil in a pan over medium heat and add the egg mixture, then close the lid. After about 10-12 minutes, cut the omelet into four pieces and turn them over. Cook uncovered for another 5 minutes. Note: The mixed herbs consist of parsley, borage, chervil, burnet burnet, dill, cress, sorrel, and chives.
