Cucumber salad with peach and chicken breast

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 3 peaches, fresh (alternatively from a can, drained)
  • 2 chicken breast fillets
  • 1 small onion(s), red
  • 1 head of lettuce of your choice (e.g. leaf lettuce, arugula, oak leaf)
  • e.g. salt and pepper
  • n. B. Seasonal herbs, fresh
  • 2 tbsp Balsamic vinegar (white)
  • 2 tbsp oil (walnut oil)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the chicken breast fillets and cut into strips. Fry them in a non-stick pan and set aside to cool. Wash the cucumber and cut into slices or small pieces, peel the onion and also chop it finely, and wash the peaches and cut them into strips or pieces. Wash the lettuce, pat dry if necessary, and cut into pieces. Mix the white balsamic vinegar, walnut oil, salt, and pepper to make a dressing. Arrange the lettuce leaves on the plates, place the cucumber and chopped onion on top, and sprinkle with the washed fresh herbs. Garnish the lettuce with the peach pieces and cold chicken breast strips, and finally drizzle the dressing over the lettuce.
