Low-carb cheese and herb quiche

Ingredients for 2 servings:

  • 150 g low-fat curd cheese
  • 150 g almond flour
  • 125 g butter, in pieces, cold
  • 250 g cream cheese
  • 200 g sour cream
  • ½ lemon(s)
  • 3 eggs
  • 100 g cheese, grated
  • 1 pinch(s) nutmeg
  • Herbs, of your choice

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 5 minutes

Press the quark through a sieve. Knead with the almond flour, a little salt, and the cold butter pieces. Shape the dough into a ball, wrap in cling film, and refrigerate for one hour. Mix the filling ingredients well. Preheat the oven to 180°C. Grease the quiche dish. Roll out the dough and pull up the edges. Use a little flour when rolling it out. Pour the filling into the dish and bake the quiche for 40-45 minutes. The filling can be varied. Eggs with tomato paste and perhaps a few fresh tomatoes, basil, and mozzarella are also good options.
