Ingredients for 2 servings:

  • 2 cups long grain rice
  • 4 tbsp olive oil
  • 1 large onion(s)
  • 1 large bell pepper(s), red
  • 1 m.-sized carrot(s)
  • 2 cups peas, frozen
  • 2 tbsp tomato paste
  • 2 tbsp ajvar
  • 4 cups vegetable broth
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Serbian, guaranteed success

Finely chop the onion and dice the bell pepper and carrot. Sauté the onion in oil, add the bell pepper and carrot, and cook until soft. Stir in the rice until it has absorbed all the oil. Pour in the stock and bring to a boil. Add the frozen peas, tomato paste, and ajvar, stir through, and bring back to a boil. Then, covered, simmer over very low heat for 20 minutes. Stir again and let stand for 5 minutes. Observe the exact ratio of rice to stock! The serving size is a standard coffee cup.
