Ingredients for 30 servings:

  • 6.8 kg ham (Burgundy), in net
  • Water

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 4 hours 15 minutes; Total time approx. 4 hours 35 minutes

for the buffet

The ham is already seasoned, so no additional seasoning is necessary. Place the ham in a roasting pan and roast in a preheated oven at 225°C for about 20-30 minutes. Add enough water to reach a depth of about 1 cm and continue roasting at 150-160°C for about 3.5 hours, basting frequently. Add a little more water if it evaporates too much. Finally, roast for another 10-15 minutes at 200°C. Let it rest for 10 minutes before slicing. The cooking time depends on the quality of the meat and the temperature your home oven actually reaches. It’s best to use a meat thermometer. The cooking liquid can be used to make a sauce the next day. Leftovers can be frozen, or eaten, with or without the sauce.
