Peanut cookies

Ingredients for 1 servings:

  • 115 g margarine
  • 150 g brown sugar
  • 150 g peanut butter, with or without pieces
  • 75 g peanuts, chopped
  • 2 packets of vanilla sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 180 g flakes (rice flakes)
  • 150 ml orange juice or other juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

gluten-free, lactose-free, vegan, makes 2-3 trays

Preheat oven to 180°C. Mix together margarine, peanut butter, sugar, salt, and vanilla sugar. Stir in the peanuts. Add the rice flakes and baking powder and mix briefly. Add the orange juice and mix well. Form small balls (approx. 2 cm in diameter) and place them on a baking sheet lined with baking paper, leaving some space between them. Bake in the upper third of the oven for approx. 10-15 minutes until golden brown. Do not overcook, or the cookies will burn. Start with a short baking time. When they are lightly browned on the bottom, they are done. Let cool and enjoy.
