Grilled pork fillet in balsamic rosemary marinade

Ingredients for 4 servings:

  • 1 ¼ kg pork fillet(s)
  • 160 ml balsamic vinegar
  • 80 ml olive oil
  • 2 tbsp soy sauce
  • 4 tsp brown sugar
  • ¾ tsp black pepper
  • ½ cup rosemary, finely chopped, fresh
  • 5 garlic cloves, chopped

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 40 minutes

Blend everything for the marinade in a blender (add the rosemary and garlic towards the end). Marinate the pork fillet. 2-3 hours of marinating time is usually sufficient, as the marinade is quite strong. Grill the meat over direct heat. Brush with the marinade after turning. Move the meat to the indirect cooking area and brush with the marinade every 3-4 minutes. Brush the meat regularly with the marinade during the first 15 minutes of grilling. After the meat has rested, carve it and season with salt.
