Power bars with Moringa

Ingredients for 1 servings:

  • 180 g almonds
  • 90 g apricot(s), dried
  • 100 g dates (Medjool)
  • 2 tbsp agave syrup
  • ½ vanilla pod(s), scraped out the pulp
  • 50 g goji berries
  • 1 tbsp powder (moringa powder), from the health food store
  • ¼ tsp sea salt

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

for a 20 x 20 cm mold, vegan, makes about 12 bars

Soak the almonds in cold water the day before and the apricots for about 30 minutes before preparation, then drain. Blend the almonds, apricots, dates, agave syrup, and vanilla seeds in a blender until they form a paste. Use a spatula to loosen the paste from the sides of the bowl. Transfer the paste to a bowl, mix in the goji berries, moringa powder, and sea salt, and process until smooth. Transfer this mixture to a 20 x 20 cm baking dish lined with baking paper and press down to form a smooth surface. Chill thoroughly for a day. Cut into approximately 12 bars.
