Zucchini and plum jam

Ingredients for 1 servings:

  • 500 g plum(s)
  • 500 g zucchini
  • 1 kg gelling sugar 1:1
  • 3 cloves, whole
  • 1 cinnamon stick(s)

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 4 minutes; Total time approx. 2 hours 34 minutes

Stone the plums and cut into small pieces. Halve the zucchini and remove the seeds, thinly slice the skin in some places, and cut into narrow strips. Cut the zucchini into pieces and place in a saucepan with the plums. Blend with a hand blender until smooth. Add the cinnamon stick, cloves, zucchini strips, and half of the gelling sugar; mix well. Let the jam steep for about 2 hours. Then add the remaining gelling sugar and bring to a boil while stirring. Boil the jam for 4 minutes, stirring constantly. Ladle the jam into prepared jars while still hot and seal.
