Altmark herring salad

Ingredients for 4 servings:

  • 8 eggs
  • 500 g Bismarck herring
  • 2 small apples
  • 2 tbsp lemon juice
  • 4 gherkins
  • 3 small onions
  • 50 g mayonnaise
  • 300 g whole milk yogurt
  • 50 g hunting sausage
  • salt and pepper
  • 1 pinch(s) of sugar
  • n. B. Capers from the jar, plus 1 shot of stock
  • Dill for garnishing

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 10 minutes; Total time approx. 4 hours 40 minutes

Hard-boil the eggs. Peel the onions. Wash, quarter, and core the apples. Finely dice the cucumber, herring fillets, sausage, and apples. Combine everything, drizzle with lemon juice, and mix well. Peel the eggs and roughly chop them. Thinly slice the onions. Add both to the diced eggs and mix well. Mix the yogurt and mayonnaise together and mix thoroughly with the salad ingredients. Season to taste with a pinch of sugar, salt, pepper, capers, and a dash of caper juice. Let the Altmärker herring salad marinate for at least 4 hours, or overnight if desired. Sprinkle the salad with dill and serve. Serve with Altmärker country bread.
