Baked sweet potato slices with cheddar and bacon-shallot mixture

Ingredients for 8 servings:

  • 1 large sweet potato(s), approx. 500 g
  • some olive oil
  • salt and pepper
  • 100 g Cheddar cheese, grated
  • 100 g breakfast bacon, finely diced
  • 3 shallots, peeled, finely diced
  • 2 garlic cloves, peeled, finely diced
  • some parsley, flat

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 200 degrees Celsius. Line a baking sheet with parchment paper. Wash and peel the sweet potato, and cut into approximately 1.5 cm thick slices. Brush both sides with oil, season with salt, and place on the baking sheet. After 15 minutes of cooking on the middle rack, turn the sweet potato slices over. After another 10 minutes, spread the cheddar cheese on top and bake for about 3 minutes, until the cheese is melted. Meanwhile, fry the bacon in a pan. Add the shallots and a little oil, if necessary, and fry until crispy. Add the garlic and sauté briefly. Season the mixture with pepper, spread it over the sweet potatoes, and serve garnished with the chopped parsley.
