Ingredients for 1 servings:

  • 250 g butter, soft
  • 250 g flour, type 405
  • 250 g cheese (grated cheese, e.g. Emmental)
  • 40 g Parmesan, grated
  • 1 pinch of salt
  • 1 egg(s), for brushing
  • Caraway seeds, for sprinkling

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 12 minutes

Knead all ingredients (except the egg and caraway seeds) into a dough and then chill for about 30 minutes. Shape the chilled dough into approximately 3 to 4 cm thick logs and divide into approximately 1 cm wide cookies. Place on a greased baking sheet or baking paper and brush with the beaten egg. Sprinkle with caraway seeds, if desired. Bake for 10 to 12 minutes at approximately 200°C, until the cookies are lightly browned.
