Perfect French fries

Ingredients for 4 servings:

  • 6 large potatoes, peeled (2 kg)
  • e.g. vegetable oil for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the potatoes and dry thoroughly. Cut lengthwise into 1 cm thick slices, then cut each slice into 1 cm wide sticks. Heat the oil in a deep, heavy pan. Dip the potato sticks in small batches into the moderately hot oil and fry for 4 minutes until light golden brown. Carefully remove the fries from the oil with tongs and drain on kitchen paper. Just before serving, heat the oil again. Fry the fries in batches until crispy and golden brown. Drain on kitchen paper. Serve immediately. Fry for 6-8 minutes.
