Fresh pea puree

Ingredients for 2 servings:

  • 1 small garlic clove(s)
  • 1 small onion(s)
  • 1 lemon(s), organic
  • 1 tbsp olive oil
  • 250 g peas, frozen
  • 4 tbsp soy cream (soy cream cuisine) (soy cream)
  • Salt
  • pepper
  • 1 box of garden cress

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Peel and finely chop the garlic and onions. Wash the lemon, dry it, and finely grate the zest. Halve the lemon and squeeze the juice from one half (reserve the other half for another purpose). Heat the oil in a pan. Sauté the garlic and onions over medium heat until translucent. Add the frozen peas and sauté for 1 minute. Add 2 tablespoons of water, 1 tablespoon of lemon juice, and the lemon zest and cook for 1-2 minutes. Pour in the soy cream and bring to a boil briefly. Purée everything with a hand blender until finely chopped and season with salt and pepper. Cut the cress from the garden bed and sprinkle it over the pea puree. The puree goes well with briefly pan-fried meat or fish.
