Pumpkin Chocolate Chip Oatmeal Cookies

Ingredients for 1 servings:

  • 200 g pumpkin puree
  • 120 g oat flakes, wholemeal
  • 100 g whole wheat flour
  • 1 tsp, heaped baking powder
  • 2 tsp ground cinnamon
  • ¼ tsp ginger powder
  • 1 tsp vanilla extract or 1 packet of Bourbon vanilla
  • 120 ml maple syrup
  • 1 pinch of salt
  • 30 g coconut oil or coconut fat, melted
  • 50 g chocolate, dark, vegan, chopped

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Delicious, healthy cookies for autumn

Combine pumpkin puree, oats, flour, baking powder, salt, vanilla extract, and spices in a bowl. Add the maple syrup and melted coconut oil and mix well. Let stand for about 10 minutes. Then stir in the chopped chocolate. Preheat the oven to 180°C. Place small mounds of dough on a baking sheet, leaving some space between them, and flatten slightly. Bake for 14-18 minutes.
