  • 1 packet of vanilla sugar or ½ tsp vanilla paste

Working time approx. 25 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 25 minutes

Strawberry snowball, ice cream bomb

First, hull the strawberries and puree them with the banana, grated orange zest, and sugar. This fruit puree is then poured into three small cups and frozen for three to four hours. Once the strawberry ice cream is frozen, mix the vanilla sugar and cream stabilizer and add to the cream while it’s whipping. Roughly chop the meringue. Once the cream is stiff (be careful not to overwhip it, or it will turn into butter!), fold in the natural yogurt. Remove the strawberry ice cream from the cups by dipping them in hot water for about 30 seconds. This makes it easy to turn the ice cream out onto small plates. Dollop the yogurt cream mixture onto the strawberry ice cream and scatter the meringue pieces over the top. Place the whole thing back in the freezer for about 20 minutes before serving.
