Melon salad

Ingredients for 8 servings:

  • 2 melons (Galia or other small varieties)
  • ½ melon(s) (watermelon), small
  • 450 g strawberries, stemmed, the large berries halved
  • 4 sprigs of mint for garnish
  • 6 tbsp oil (walnut oil)
  • 1 tbsp vinegar (white wine vinegar)
  • 1 tbsp lemon juice
  • 2 tbsp mint, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Halve the Galia melons and scoop out the seeds. Scoop out the flesh with a melon baller, leaving enough to hold the rind firmly in place. Scoop out the watermelon flesh and remove the seeds. Mix the melon balls with the strawberries. Cut a thin slice from the bottom of the melon bowl to help it stand upright. Cut a wavy line into the rim. Fill the bowls with the fruit salad. For the dressing, heat the oil, vinegar, and lemon juice. Remove from the heat, whisk, and add the chopped mint. Pour over the melon balls, garnish, and serve immediately. If the melon bowl doesn’t look good enough, serve the salad in glass bowls.
