Vegetarian cabbage rolls

Ingredients for 6 servings:

  • 300 ml tomato juice
  • 250 g bulgur
  • 12 leaves of white cabbage
  • 1 liter vegetable broth
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with bulgur

Season the tomato juice with salt and pepper and bring to a boil. Sprinkle in the bulgur, stir, and let stand, covered, for about 20 minutes, until the bulgur has swelled. Carefully separate the cabbage leaves from the head and blanch them briefly in the vegetable broth. Remove the leaves, stack them two on top of each other, fill them with the bulgur, and tie them together to form a cabbage roll. Cook in the vegetable broth. Serve with tomato and onion sauce, if desired.
