Cabbage noodles

Ingredients for 4 servings:

  • 250 g tagliatelle pasta (spelt tagliatelle pasta)
  • 300 g sauerkraut, fresh
  • 1 large onion(s)
  • 100 g smoked tofu
  • 1 tsp paprika powder, smoked
  • 1 tsp liquid smoke, optional
  • 100 ml beer
  • 100 ml vegetable stock
  • 2 bay leaves
  • ½ tsp caraway powder
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

vegan and hearty

Break the noodles into the bag, then cook in boiling water until al dente. Finely chop the onions. Cut the smoked tofu into small cubes. Fry the onion and smoked tofu cubes in hot oil until browned. Add the sauerkraut to the onion mix and fry until browned. Pour in the beer and broth. Stir in the bay leaves, paprika, and caraway seeds. Simmer everything in a covered pot for about 10 minutes, then remove the lid and simmer uncovered for another 10 minutes until the liquid has evaporated. Remove the bay leaves. Season everything with liquid smoke, if desired. Stir the noodles into the cabbage.
