Asparagus with tomato salsa

Ingredients for 2 servings:

  • 250 g asparagus, cooked
  • 2 tomatoes, diced
  • 2 stalk(s) spring onion(s), sliced
  • Herbs, as desired
  • 2 tbsp Balsamic vinegar, white
  • 2 tbsp oil (walnut oil)
  • 2 tbsp olive oil
  • some sugar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

either as an asparagus salad for leftovers or as an alternative sauce for warm asparagus

Dice the tomatoes and slice the spring onions. For the dressing: Combine the balsamic vinegar, oil, a little sugar, salt, and pepper. Add the chopped herbs and mix with the diced tomatoes and spring onions. Now either pour over the warm asparagus or slice the asparagus and toss it with the salsa. Let it sit for a while (approx. 30 minutes).
