Speculoos made from ancient grains

Ingredients for 1 servings:

  • 500 g einkorn wholemeal flour, freshly ground
  • 2 tsp, leveled baking powder
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 1 pack of speculatius spice
  • 1 pinch of salt
  • 2 eggs, size M
  • 150 g margarine, soft
  • 100 g almonds, ground

Instructions

Working time approx. 1 hour; Rest time approx. 30 minutes; Cooking/baking time approx. 9 minutes; Total time approx. 1 hour 39 minutes

In a mixing bowl, mix the flour and baking powder. Add the sugar, vanilla sugar, speculatius spice, salt, eggs, margarine, and almonds. Knead everything with the dough hook briefly on the lowest speed, then on the highest speed, until you have a smooth dough. Chill the dough for about 30 minutes. Line a baking tray with baking paper and preheat the oven to 160°C (convection or fan-assisted). Roll out the dough in portions into oblong sheets and cut out shapes with a speculatius rolling pin. Place the dough pieces on the baking tray. Bake in the preheated oven on the middle shelf for about 9 minutes, then for a further 7 minutes.
