Ingredients for 1 servings:

  • 4 egg whites
  • 150 g sugar
  • 70 g low-fat curd cheese
  • 1 packet of vanilla sugar
  • 6 drops of rum flavoring
  • 1 tbsp rum
  • 200 g desiccated coconut
  • 200 g candied pineapple pieces
  • wafers

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Cut the candied pineapple into about 60-70 pieces. Beat the egg whites with the sugar until stiff peaks form. Separately, mix the low-fat quark with the vanilla sugar, rum, and rum flavoring in a cup until smooth. First, fold the quark mixture into the beaten egg whites, followed by the coconut flakes. Drop the mixture onto the wafers with two teaspoons and top with the pineapple pieces. Bake at 180°C (convection oven) for about 10-12 minutes.
