Ingredients for 2 servings:
- 200 g carrot(s)
- 200 g potatoes
- 4 tbsp oat flakes, wholegrain
- 2 eggs
- salt and pepper
- Nutmeg, grated
- 2 tbsp oil
- 1 onion(s)
- 1 clove(s) garlic
- 1 bunch of chives
- 1 cup of yoghurt (skimmed milk yoghurt, 150g)
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Peel, wash, and coarsely grate the carrots and potatoes. Combine the grated vegetables, except for a few carrot sticks, with the oats and eggs. Season with salt, pepper, and nutmeg. Fry small fritters in hot oil until golden brown. Peel and finely dice the onion and garlic. Wash the chives, shake dry, and cut into small rolls. Mix the yogurt, onion, garlic, and chives. Season with salt and pepper. Sprinkle the fritters and dip with grated carrots.
