Ingredients for 12 servings:
- 200 g quinoa (from health food stores or well-stocked grocery stores)
- 700 ml vegetable stock
- 500 g potatoes
- 300 g carrot(s)
- 150 g leek
- 4 eggs
- 3 tbsp flour
- salt and pepper
- Olive oil, for frying
- nutmeg
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the quinoa gently with vegetable broth and let it swell, then let it cool. Coarsely grate the potatoes and carrots and finely chop the leek. Mix the quinoa, potatoes, vegetables, eggs, and flour, and season with salt, pepper, and nutmeg. Form into patties and fry slowly in olive oil.
