Mozzarella chicken in basil cream sauce

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • salt and pepper
  • 1 tbsp oil
  • 250 g cocktail tomatoes
  • ½ pot of basil
  • 200 g cream
  • 100 g cream cheese spread
  • Fat for the mold
  • 125g mozzarella
  • e.g. Parmesan, optional
  • 1 tbsp herb butter, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Wash the meat and pat dry. Season with salt and pepper. Heat oil in a pan. Sear the fillets on all sides for about 5 minutes. Wash and halve the tomatoes. Pick, wash, and finely chop the basil leaves. Bring the cream to a boil in a saucepan. Stir in the cream cheese and let it melt. Season with salt and pepper. Stir in 2/3 of the basil. Place the meat and tomatoes in a greased baking dish. Pour the sauce over the meat. Cut the mozzarella into small pieces and spread it over the meat. If you like, you can also scatter grated Parmesan and 1 tablespoon of herb butter on top. Bake in a preheated oven at 200°C (top/bottom heat) or 175°C (fan oven) for about 30 minutes. Remove from the oven and sprinkle with the remaining basil. Serve with croquettes or rice.
