Eggplant rolls with ham and cheese

Ingredients for 12 servings:

  • 2 eggplant(s), approx. 15 cm long
  • 12 slice(s) ham, cooked
  • 12 slice(s) cheese, Fontina or Emmental
  • Salt
  • 6 tbsp olive oil
  • 20 g Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Antipasti, finger food, simple and delicious

Wash and dry the eggplants, then cut them lengthwise into 12 slices, leaving the outside edges untouched. Fry the slices one at a time in olive oil and season with salt. Let the fried slices cool slightly on a plate. Top the eggplant slices with a slice of ham and cheese, roll them up, and place them in an ovenproof dish. Preheat the oven to 240 degrees Celsius (fan oven not recommended) and bake the rolls for about 15 minutes. Remove the dish from the oven, drain off any excess liquid, and sprinkle Parmesan cheese over the rolls and bake in the oven for about 5 minutes. You can also serve the rolls with risotto, for example, for a delicious dinner. This recipe will then serve 4 people.
