Red cabbage and apple salad

Ingredients for 4 servings:

  • 550 g red cabbage
  • 250 g apples, sour
  • 150 g carrot(s)
  • ½ bunch chives
  • 50 g spring onions
  • 2 tbsp olive oil or sunflower oil
  • 2 tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 3 tbsp apple juice
  • salt and pepper
  • some sugar or honey, if desired

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Total time approx. 55 minutes

Red cabbage, apple and carrot raw vegetables, red cabbage provides a lot of vitamin C

Mix together a dressing from oil, mustard, vinegar, and apple juice. Remove the stalk from the red cabbage and finely grate the cabbage. Grate the apples and peeled carrots, and finely chop the spring onions. Mix the vegetables and the dressing well. Season with salt and pepper to taste, and add a little sugar if desired. Let it stand briefly. Serve with chives.
