Apple, pear, and grape salad with nut brittle

Ingredients for 4 servings:

  • 75 ml honey
  • 50 ml cream
  • n. B. Oil, (walnut oil or other neutral)
  • 50 g hazelnuts
  • 50 g walnuts
  • 400 g grapes
  • 4 apples
  • 200 g pear(s)
  • 5 tbsp lemon juice
  • 5 tbsp orange juice

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Briefly boil 50g of honey with the cream and caramelize while stirring. Mix in the cracked and coarsely chopped nuts. Spread the mixture on a baking sheet greased with walnut oil (or cooking oil), let it cool, and then break it into pieces. Wash and core the grapes, wash and slice the pears, wash, core, and slice the apples, then put everything in a bowl and mix. Mix the orange juice, lemon juice, and the remaining honey and drizzle over the salad. Mix again. Sprinkle with the nut brittle. I serve this with walnut or vanilla ice cream.
