Spelt and quark rolls

Ingredients for 1 servings:

  • 250 g quark
  • 1 egg(s)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 350 g spelt flour (1/2 type 1050 and 1/2 wholemeal spelt flour)
  • 1 packet of baking powder
  • 1 tbsp chia seeds, if you like
  • 1 tbsp flaxseed meal

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Quick, easy and delicious

Preheat the oven to 180 degrees Celsius (convection oven). Whisk together the quark, egg, olive oil, and salt. Now add the flaxseed meal and, if you like, the chia seeds, and let it soften slightly. Weigh the flour (a type of spelt flour also works) and mix it with the baking powder. Knead the flour mixture into the quark mixture. I use my hands to feel whether the dough is too dry and perhaps needs a little more quark. It should be a smooth dough that is only slightly sticky. If it is too sticky, simply sprinkle some flour on the worktop and knead. Cut the dough into 8 equal pieces and shape them into rolls. I always form one large ball and then divide them. Place these on a baking sheet and make deep cross-shaped cuts with a sharp knife. Place the rolls in the oven for 20 minutes. I also tried baking with freshly ground spelt flour, but unfortunately, they turned out dry and hard, not fluffy. I suspect it was due to insufficient fluid, but I didn’t investigate further.
