Halloumi skewers

Ingredients for 4 servings:

  • 1 pack of cheese (Halloumi)
  • 1 zucchini
  • 8 mushrooms, brown or white, of your choice
  • 1 bell pepper(s), red or yellow
  • Olive oil or rapeseed oil
  • salt and pepper
  • 2 stalks of thyme
  • 1 garlic clove(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 30 minutes

Wash and prepare the vegetables. Cut the zucchini lengthwise into 3 mm thick slices. Halve the mushrooms and slice the bell peppers. Cut the halloumi crosswise into 0.5 to 1 cm thick slices. Place a piece of halloumi on a zucchini slice and roll it up. Thread the pieces onto skewers (metal is best): first half a mushroom, a piece of bell pepper, halloumi wrapped in zucchini, a piece of bell pepper, and half a mushroom. The order and quantity can be changed if you like. Mix a marinade of oil, chopped thyme, finely chopped garlic, salt, and pepper and brush the finished skewers with it. Let it marinate for at least 45 minutes. Cook in the oven (25 minutes at 150°C fan-assisted), in a pan, or on the grill.
