Vegan elderberry cakes

Ingredients for 1 servings:

  • 12 elderflower umbels
  • 400 ml oat milk (oat drink)
  • 250 g flour
  • 2 tbsp sugar or 2 packets vanilla sugar
  • 1 tsp rum or 2 – 4 drops rum flavoring
  • 1 packet of baking powder
  • Oil for frying
  • e.g. dessert sauce, vegan (vanilla flavor) or cinnamon sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 24 minutes

Recipe from my grandma, veganized, egg-free, dairy-free

Using a mixer, make a batter from flour, oat milk, sugar, rum, and baking powder. Dip the elderflower heads into the batter until they are completely covered. Remove them from the pan, letting any excess batter drip off and fry them in a pan filled with oil or in a deep fryer for about 3-4 minutes. Serve with vanilla sauce or simply cinnamon sugar.
