Ingredients for 1 servings:

  • 10 elderflower heads, more if needed
  • 2 liters of apple juice, clear or cloudy
  • 2 sprigs of mint, fresh
  • 1.335 g gelling sugar, 2:1
  • 1 lime(s), juice and zest

Instructions

Working time approx. 35 minutes; Rest period approx. 1 day; Total time approx. 1 day 35 minutes

with mint and lemon

Depending on the desired intensity, gather 10 to 15 elderflower heads (or more if you prefer it even more intense) and steep them in 2 liters of apple juice. Add the fresh mint leaves. Add the zest of one organic lime, cover, and let steep for 24 hours. Strain the liquid through a fine sieve and bring to a boil along with the preserving sugar and the juice of one lime according to the instructions. Then pour into clean jars. If you like, you can add fresh mint leaves when filling the jars to enhance the mint flavor until opened. This yields approximately 12 jars, depending on the size of the jars.
