Marinated pork fillet with tomatoes and feta cheese topped with zucchini

Ingredients for 4 servings:

  • 600 g pork fillet(s)
  • 5 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp oregano, dried
  • pepper, black
  • 2 thick zucchini
  • 4 tomatoes
  • 250 g sheep’s cheese
  • Salt

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 50 minutes

Food combining protein

Cut the pork fillet into 1 1/2 cm thick slices. In a bowl, whisk the olive oil with lemon juice, oregano, and pepper. Toss the fillet slices in the mixture. Cover and marinate in the refrigerator for 2-3 hours. Wash and trim the zucchini and cut into 1 cm thick slices. Wash the tomatoes and remove the stem ends. Slice the tomatoes as well. Finely dice or crumble the feta cheese. Heat a non-stick pan. Add the fillet slices with the marinade and sear on each side, then remove from the pan. Fry the zucchini in the remaining fat in the pan over medium heat for 5 minutes until golden brown, season with salt and pepper, and transfer to preheated plates. Cover and keep warm. Return the fillet slices to the pan, top with tomato slices, and sprinkle with the feta cheese. Cook, covered, for another 3 minutes, until the cheese begins to melt slightly. Serve with the zucchini.
