Zucchini and mushroom pan with feta

Ingredients for 3 servings:

  • 500 g zucchini
  • 400 g mushrooms
  • 1 red bell pepper(s)
  • 1 clove(s) garlic
  • 1 onion(s)
  • 100 g feta cheese, with herbs
  • 200 ml sweet cream
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely chop the onion and sauté in heated olive oil until translucent. Then add the sliced ​​mushrooms and sauté. Add the diced zucchini and sliced ​​bell pepper, and season with salt and freshly ground pepper. Crush the garlic clove and add it to the pan with the sweet cream, then simmer. Crumble in the finely chopped feta cheese and season again when it reaches the right consistency. Serve with wild rice or simply a baguette.
