Ingredients for 1 servings:
- 230 g carrot(s)
- 1 clementine(s)
- ½ organic lemon(s)
- 3 walnuts
- ¼ tsp salt
- Spinach, New Zealand, some leaves
- 1 tbsp walnut oil
Instructions

Peel the carrots; if organic, simply wash and finely grate them. Peel the clementine, cut it into individual segments, and then halve them. Wash, dry, and halve the lemon. Set one half aside for another dish. From the other half, only grate the yellow part of the peel and squeeze out the juice. Crack the walnuts. Place all ingredients in a bowl with the salt and mix thoroughly. Season again to taste and add a little more salt if desired. Wash the New Zealand spinach leaves, pat them dry, and garnish the raw vegetables with them. Finally, drizzle with walnut oil. Instead of New Zealand spinach, you can also use regular spinach, a few leaves of lamb’s lettuce, parsley, or chives. Whatever you have on hand.
