Yogurt spelt wholemeal bread à la Tigernut

Ingredients for 1 servings:

  • 500 g wholemeal spelt flour
  • 400 ml natural yogurt
  • 100 ml water, lukewarm
  • 1 cube of yeast
  • 150 g seeds (pumpkin seeds, sunflower seeds, flax seeds, chia seeds or whatever you like)
  • 2 tsp salt
  • 1 tsp bread spice mix

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 15 minutes

First, dissolve the yeast in the lukewarm water. Combine the flour and seed mix in the bowl of a food processor, then add the salt and bread spice. Then, add the yogurt (I always use homemade yogurt) and finally the yeast water. Mix well with the dough hook on the food processor. Pour the sticky dough into the greased and oat-sprinkled bread pan. Let it rise in a warm place for 1 hour. Then, bake at 200°C (top/bottom heat) for about 1 hour.
