Baked banana with red currants and chopped almonds

Ingredients for 2 servings:

  • 2 bananas
  • 1 tsp lime juice, freshly squeezed
  • 6 tbsp red currants, fresh or frozen
  • e.g. honey or agave syrup
  • 2 tbsp almonds, chopped, possibly roasted

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

with vegan option

Peel the bananas. Place them on a baking sheet lined with baking paper or in a baking dish. Arrange the currants around the outside. Drizzle with lime juice and honey (agave syrup for the vegan version). Bake in a preheated oven at 180°C (top/bottom heat) for about 10 minutes. Serve on plates and sprinkle with almonds. Delicious as a dessert or snack. Be sure to use lime or lemon juice to prevent the banana from tarnishing while baking.
