Ingredients for 1 servings:
- 1 bell pepper(s)
- 200 g cottage cheese
- 2 tsp tomato paste
- 3 tbsp herbs (e.g. parsley, chives), chopped
- salt and pepper
- 2 tbsp cheese, grated or 1 small cheese slice

quick, healthy recipe for 1 person
Wash the bell pepper thoroughly and cut off the top. Remove the seeds. Mix the cottage cheese, tomato paste, herbs, and spices well and stuff the bell peppers. Sprinkle the cheese on top or place a slice of cheese on top. Bake in a preheated oven at 200°C (top/bottom heat) for about 20 minutes, until the bell pepper skin is lightly browned. Serve with a green salad or tomato sauce. Tip: For variation, you can use red curry paste instead of the tomato paste. Use carefully so it’s not too spicy.
