Tuna toast muffins

Ingredients for 4 servings:

  • 8 slices of toast
  • 8 eggs
  • 1 cup cottage cheese
  • 1 can of tuna
  • possibly chives or spring onions
  • salt and pepper
  • chili
  • butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Roll out the untoasted toast on a work surface with a rolling pin. Butter a muffin tin and gently press the toast into the tin. Mix the tuna with the cottage cheese and stir in salt, pepper, and a little chili. Spoon about 1 tablespoon of this mixture into each tin and crack an egg over it. Season again with a little salt and, if desired, sprinkle with chives or spring onions. Bake in the oven at 180°C for about 20 minutes, until the egg is set. Instead of the tuna and cottage cheese, you can also use salami, ham, salmon, tomatoes, or just the egg.
