Ingredients for 6 servings:
- 8 eggs
- 150 ml milk
- 1 tsp baking powder
- 1 tsp oil
- 150 g cheese, grated
- ½ red bell pepper(s)
- 100 g cooked ham
Instructions
Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Preheat the oven to 200°C. Grease the muffin cups. Chop the bell pepper and ham. Mix the eggs, milk, baking powder, oil, salt, and pepper. Place the bell pepper or ham in the muffin cups, sprinkle a little cheese over each one, and pour the egg mixture over the top until the cups are about 4/5 full. Bake at 200°C for about 20 minutes and let cool for 5 minutes before enjoying. Cold muffins are also great for on the go, or they can easily be heated in the microwave when needed.
