Ingredients for 4 servings:

  • 100 g butter
  • 4 eggs
  • 250 g flour
  • 2 tsp baking powder
  • 125 ml water
  • 150 g bacon, streaky
  • 2 onions
  • 1 bunch of chives
  • ½ bunch parsley
  • Cayenne pepper
  • Black pepper, freshly ground
  • Salt
  • Bacon rind for greasing the waffle iron

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk together softened butter and eggs. Alternately add flour mixed with baking powder and water. Stir in finely chopped bacon, diced onions, and chopped herbs. If the batter is too thick, add a little more water. Season to taste. Let the batter rest a bit. Rub the bacon rind onto the preheated waffle iron. Pour in a generous spoonful of waffle batter and bake until golden brown. Serve with herb curd, fresh salad, or even egg salad.
