Mashed potatoes with wild garlic

Ingredients for 2 servings:

  • 400 g potatoes, peeled
  • 1 bay leaf, fresh
  • 100 ml sweet cream or lactose-free milk
  • 30 g wild garlic
  • 1 pinch of nutmeg
  • 1 pinch of chili salt
  • some olive oil, mild, virgin

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

very aromatic

Boil the peeled potatoes in plenty of salted water sprinkled with a bay leaf. In the meantime, finely chop the wild garlic leaves. Remove the bay leaf, drain the potatoes, and let them steam slightly on the hot stovetop with the lid halfway on. Heat the cream or milk (or microwave if necessary) and place it in a tall container (mixing jug or blender) with the finely chopped wild garlic. Purée with a hand blender. Season the steamed potatoes with a little grated nutmeg and chili salt. Then mash them with a potato masher and the warm wild garlic cream or milk. Drizzle with a few drops of olive oil and serve immediately.
