Fried eggs with tomatoes

Ingredients for 2 servings:

  • 4 eggs
  • 3 tomatoes
  • ½ bell pepper(s), green
  • 1 spring onion(s)
  • ½ tsp sugar
  • n. B. Salt
  • 1 tsp cornstarch
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Chinese home cooking

Whisk the eggs. Slice the tomatoes into wedges. Chop the remaining ingredients. Mix 1 teaspoon of cornstarch with a little water. Add a little sugar and salt. Fry the eggs in a little oil, as if making an omelet. When the egg mixture sets, tear them into pieces and remove them from the pan. Fry the spring onions in oil and add the diced bell peppers. Then add the tomatoes and season with salt, if desired. Return the egg pieces to the pan and add the mixed cornstarch. Let them set briefly and stir again briefly.
