Mashed potatoes with parsley and garlic

Ingredients for 2 servings:

  • 500 g potatoes
  • 2 tbsp butter, approx. 20 g
  • 1 garlic clove(s)
  • 2 tbsp parsley, chopped, fresh or frozen
  • Salt and pepper, white
  • nutmeg
  • e.g. milk

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel the potatoes, dice them, and weigh them. Place them in a pot of salted water, cover, bring to a boil, and simmer for 20 minutes. Peel the garlic clove and cut it into fairly small cubes. Melt the butter in a small pan, add the garlic, and sauté on low heat for a few minutes. Finely chop the parsley. Drain the cooking water, return the pot to the stove, and let the potatoes cool briefly, then mash them with a potato masher. Fold in the garlic-butter mixture with a spatula, then stir in enough milk until the mash reaches the desired consistency. Season to taste. Stir in the parsley and serve.
