Carrot and apple raw vegetables with mandarin orange salad dressing

Ingredients for 4 servings:

  • 3 mandarins or clementines, juice
  • 2 tbsp oil (walnut oil)
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • salt and pepper, curry
  • 500 g carrot(s)
  • 3 apples
  • possibly walnuts, chopped

Instructions

Working time approx. 20 minutes; Rest time approx. 20 hours; Total time approx. 20 hours 20 minutes

Coarsely grate the apples and carrots and toss with the lemon juice. Mix the juice of the tangerines or clementines with the remaining ingredients to make a salad dressing. Season to taste. Toss with the salad and let it sit for a while. Sprinkle or mix in some chopped walnuts, if desired.
