Red cabbage from the pressure cooker

Ingredients for 8 servings:

  • 2 ½ kg red cabbage
  • 4 apples
  • 1 small onion(s)
  • ¼ liter red wine, strong
  • ⅛ liter vinegar
  • 1 tbsp oil or butter for frying
  • 3 pinches of salt
  • 6 tsp jam (red currant)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cut or slice the red cabbage into thin strips. Finely dice the onions. Peel and thinly slice the apples. Sauté the onions in the fat in a pressure cooker and deglaze with a little red wine. Now alternate layers of red cabbage and apples in the pot. Add the remaining red wine and the vinegar. Cook under pressure in a covered pressure cooker for 12 minutes. Drain under cold running water and season with salt and blackcurrant jam.
