Wild garlic and potato puree

Ingredients for 4 servings:

  • 70 g wild garlic, fresh
  • Salt
  • 4 large potatoes, floury
  • 100 g cream
  • 4 tbsp cheese, Gruyère, grated
  • 50g mozzarella
  • Pepper, white
  • nutmeg

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

As a main course for 2, as a side dish for 4 people

Clean and wash the wild garlic, then blanch it in boiling salted water for about 2 minutes. Remove it from the water, rinse it in cold water, and drain well. Finely chop the wild garlic. Boil the potatoes until tender, peel them while still hot, and mash them. Stir the cream into the hot mashed potatoes. Fold in the Gruyère cheese. Cut the mozzarella into small pieces and mix it into the mashed potatoes. Finally, fold the chopped wild garlic leaves into the mashed potatoes and season with salt, pepper, and a little nutmeg. Served with a large bowl of green salad, this dish makes a delicious vegetarian main course. It also makes a great side dish with grilled or pan-fried dishes, as well as hearty meatloaf or meatballs.
